Many of you know I have been on the growing 'don't buy Tassie salmon' bandwagon since reading Richard Flanagan's book Toxic about a year ago. It was shocking to see the state of the industry, and even more shocking that we thought we were eating something that was really good for us. This just-released video has strengthened my resolve (which I have to admit was waning as I am not sure how much impact we have all had) to continue and to spread the word.

Please share this post, or any post supporting this stand, it is such an important message - especially for those of us who used to love eating Tassie salmon.

And sadly this also applies to all the smoked salmon from Tassie including @huonsalmon which we all used to love.

Click on the link in our profile for the original @neighbours_of_fish_farming video. 🙏🏻 @joostbakker for posting the video, that's where I first saw it.

I have been buying NZ king salmon @regalsalmonnz @orakingsalmon and @alpinesalmon (Mt Cook, NZ, can buy at @harrisfarmmarkets) and exploring many other fish options. Check out @goodfishproject for an excellent guide to what we should be buying here in Aus.

We also need to rally the big buyers in Aus - @colessupermarkets @woolworths_au to stop buying farmed Tassie salmon until the industry has been cleaned up.

(btw when we were in beautiful Tassie last year, not one restaurant we went to served salmon. Doesn't that say something?)

The Space Between the Stars.

A book of love, joy, loss, grief and healing.
And two mischievous little girls swirling in a blue brocade 'sari'.

I laughed and I cried. A beautiful and seriously heart warming book from the very special @dearindira. Thank you Indira for sharing your pain, your hope and the wonders of nature which will pave the way forward for many readers. May Stargirl's memory be a blessing❤️❤️❤️.

We will commemorate and celebrate Anzac Day here in Aus on Monday 25th April. Part of the Anzac day tradition is to bake and eat Anzac biscuits - a lovely moreish bickie made out of flour, oats, coconut and golden syrup.

Here's a delicious, oaty and square (different-to-the-usual!) version from the kitchen of Saranne Chait called Crunchies. You can find the full recipe below - it's from our most recent book, Now for Something Sweet.

INGREDIENTS:
275 g (1 1⁄2 heaped cups) plain flour
110 g (1 cup) rolled oats
175 g (¾ cup) caster sugar
85 g (1 cup/3 oz) desiccated coconut
1⁄4 teaspoon salt
220 g unsalted butter
2 heaped tablespoons golden syrup
1 teaspoon bicarb soda

Preheat the oven to 160℃(320℉).
Line a 32 x 22 cm (quarter sheet) baking tin.

Mix the flour, the oats, the sugar, the coconut and the salt together in an extra large bowl.

In a medium saucepan over medium heat, melt the butter and golden syrup together and then stir in the bicarbonate of soda.

Once it froths, pour onto the dry ingredients and mix well with a wooden spoon.

Use your fingertips to separate any clumps that form. Tip into the prepared tin and smooth the top, pressing down just a little.

Bake for 40 minutes or until golden.

Allow to cool for 10 minutes before turning out and slicing into squares.

Place the cut squares onto a flat baking tray into the still-warm oven (it should be switched off) for 2 hours or until crunchy. If you prefer them more chewy than crunchy, don’t put them back in the oven.

It's that time of the year.
Matzo brei - or egg matzo as we call it - is a Passover friendly brekkie or lunch that's sort of somewhere in between scrambled eggs and French toast.
And it's bloody delicious!
Serve with sour cream and a sprinkle of salt.

This is one of my FAVOURITE things to make during Passover.

It's called Matzagne and it is simply a lasagne made with matzo.

I have been lucky enough to have had the original made for me over the years by my friend Nikki in Melb but there are some years I just have to make it myself. And btw, her bolognese has also become a family fave at my place. Just sooooo delicious....

Meet Kulich.
Or Russian Easter Bread.
It is a tall, sweet, yeasted dried-fruit studded bread, traditionally served with a creamy sweet cheese (pashka) on the side. It takes a little bit of effort, but it is SO worth it.

Recipe can be found in our most recent book, Now for Something Sweet.
It is a bit of a cooking project, especially the first time you make it, but it is just so delicious and unique.
