Kindness Soup

A delicious, smooth, filling soup that's just simply good for you. The original recipe comes from Aussie Body Diet and we have just added a little cauliflower because....well...we just love cauliflower and it makes the soup 'creamier'.

Ingredients
  

  • 1 tsp extra virgin coconut oil
  • 1 onion chopped
  • 1 garlic clove bruised
  • 1/2 tsp fresh ginger minced
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cardamom
  • 1/2 tsp chilli flakes
  • 1.5 litres water
  • 1 bunch silverbeet chopped
  • 1 stalk celery chopped
  • 1/2 cup broccoli florets
  • 1/2 cup cauliflower florets
  • sea salt and freshly ground black pepper

Method
 

  1. Heat the coconut oil in a frying pan. Fry the onion for 2 to 3 minutes, until translucent.
  2. Add the garlic, ginger and spices and cook for a further 2 minutes, stirring well.
  3. In a large saucepan, bring the water to the boil. Add the chopped vegetables and the onion/spices and simmer for 20 minutes.
  4. Puree the soup in a blender until it has a smooth consistency. Season well with salt and pepper to taste.
