‘Kindness Soup’: A Delicious Healthy Soup

A Soup For All Seasons

Many of us have been cooking, eating, eating and cooking over the past week or so, whether we have been celebrating Passover, Easter or simply the long weekend. We all overindulge from time to time, some of us more than others (pick me, pick me!)

And there are times when we need to give the strudels, kugels, chiffon cakes and baklava a break and nurture our bodies with something warm, delicious and simply good for us.

Since I’ve been following a healthier eating plan to lose a few of the KGs I gained from 8 years of SUPER DELICIOUS AND UNABLE TO RESIST recipe testing, this recipe has been a godsend. The soup comes from the amazing Saimaa Miller from Aussie Body Diet and she has given me permission to share the soup love around. Her gorgeous book has so many wonderful, simple and always healthy food ideas.

It makes an excellent meal if you add some shredded grilled chicken and brown rice, or a lovely, filling snack in the afternoon. Enjoy!

Instructions
  1. Heat the coconut oil in a frying pan. Fry the onion for 2 to 3 minutes, until translucent.
  2. Add the garlic, ginger and spices and cook for a further 2 minutes, stirring well.
  3. In a large saucepan, bring the water to the boil. Add the chopped vegetables and the onion/spices and simmer for 20 minutes.
  4. Puree the soup in a blender until it has a smooth consistency. Season well with salt and pepper to taste.

Many of you know I have been on the growing 'don't buy Tassie salmon' bandwagon since reading Richard Flanagan's book Toxic about a year ago. It was shocking to see the state of the industry, and even more shocking that we thought we were eating something that was really good for us. This just-released video has strengthened my resolve (which I have to admit was waning as I am not sure how much impact we have all had) to continue and to spread the word.

Please share this post, or any post supporting this stand, it is such an important message - especially for those of us who used to love eating Tassie salmon.

And sadly this also applies to all the smoked salmon from Tassie including @huonsalmon which we all used to love.

I have been buying NZ king salmon @regalsalmonnz @orakingsalmon and @alpinesalmon (Mt Cook, NZ, can buy at @harrisfarmmarkets) and exploring many other fish options. Check out @goodfishproject for an excellent guide to what we should be buying here in Aus.

We also need to rally the big buyers in Aus - @colessupermarkets @woolworths_au to stop buying farmed Tassie salmon until the industry has been cleaned up.

(btw when we were in beautiful Tassie last year, not one restaurant we went to served salmon. Doesn't that say something?)
