1. Once you have made your sponge, cut into squares.
2. Make the chocolate icing mixture and dip the sponge square into the chocolate
3. Quickly remove from the chocolate mixture, ready for the next step
4. Put the chocolate coated square into the coconut. We used shredded coconut, but dessicated is ok too.
5. Make sure the square is well covered in coconut
6. Let the lamingtons 'dry' a little on a cooling rack. They are then ready to scoff!!
